Fact #1: After 30 minutes at 400 degrees F in the oven, an eggplant will explode.
Fact #2: Three eggplants will do exactly the same thing.
Fact #3: This is an example of multi-tasking gone wrong.
Fact #4: I will be cleaning my oven tomorrow.
Fact #5: There will be no Baba Ghanoush dip at our house this weekend.
This happened within a few minutes of the guys coming in from the field for supper so there is no photo documentation. Trust me - it happened!!

Oh no! What a terrible mess that must have made? I usually cut mine in half so I've never had that problem. Sorry you won't have the delicious dip this weekend. Thanks for the tip though. ;)

ReplyDeleteI used to cook eggplants in the oven when I lived in Italy, then marinade the strips of flesh in olive oil, fresh garlic, and vinegar. I was always taught to poke the eggplant with a fork before roasting it... now I understand why! I'm sorry to hear about the messy oven. Ugh. Not what you need during harvest time!
