Thanks for all of your kind comments yesterday. I really do appreciate your visits and the comments - sometimes it amazes me that I have so many friends reading my little bits and pieces.
Some of you asked for the recipe for Zebra Cookies and I'm glad to share it. I found it online at www.organizedchristmas.com - there's alot of stuff to check out over there!
2 1/8 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened slightly
1 3/4 cups granulated sugar
3 large eggs
1 teaspoon vanilla
4 1-oz. squares unsweetened baking chocolate
1/2 cup icing sugar
1 12-oz. pkg. Hershey's Hugs (striped chocolate kisses)
Melt chocolate (I chopped the squares up a bit, put them in a little casserole dish and put it inside the oven while it preheated for something else I was baking. Check it after a few minutes, stir and pop back in the oven if the chocolate's not melted yet. This is a really easy, foolproof way of melting chocolate.) Set aside to cool slightly.
In a large bowl, beat butter and granulated sugar with electric mixer until fluffy. Beat in eggs until mixture is pale yellow, add vanilla and melted chocolate. Blend well. Gradually add flour, salt and baking powder, mixing just to blend. When dough is mixed, cover and refrigerate for 1 hour. (I put mine in the fridge overnight.)
Preheat oven to 350 degrees. Shape heaping teaspoonfuls of dough into balls. Roll in icing sugar. Transfer balls to greased baking sheet. Place 1 1/2 inches apart on sheets. Bake 8 minutes. Remove from oven. Firmly press chocolate Hug candies into center of cookie. Return to oven for 3 - 4 minutes. Do not overbake. Cookies are soft when hot but firm and chewy when cool. Remove to racks to cool.
Makes 48 cookies. (I made 48 and had some dough left over so I just baked it as chocolate cookies and they were good too.) Enjoy!!
