Easy Summer Recipe

I had to be at a meeting last night and I wanted to leave something for Bob for supper.  I had some chicken drumsticks on hand and perused my Company's Coming "Slow Cooker Recipes" book to find this.

Lemonade Chicken

Frozen concentrate lemonade, thawed          1/2 of 12.5 oz.
Brown sugar packed                                     3 tbsp.
Ketchup                                                        3 tbsp.
White vinegar                                               1 tbsp.
Liquid gravy browner                                  1 tsp.
Chicken breasts                                            6

Stir first 5 ingredients in bowl.
Arrange chicken pieces in bottom of 3.5 L slow cooker, overlapping if necessary.  Pour lemonade mixture over all.  Cover.  Cook on Low for 8 to 10 hours or on High for 4 to 5 hours.  Thicken gravy slightly.
 Serves 6.

I used pink lemonade - that's what I had.  I didn't have liquid gravy browner so used powdered instead.  I think chicken bouillion might give the flavour but not the extra color (not a big problem to me).  I used 12 chicken drumsticks instead and the lemonade mixture was enough for that.   I  browned them under the broiler for a few minutes before putting them in the slow cooker.  The slow cooker is so easy for summer meals and it doesn't heat up the whole house.

When I came home there were just a few pieces left for me - so I think Bob liked it!

  1. Yummy....sounds good! I am always looking for good slow cooker recipes!

  2. lol! You always know that it's a good recipe if Dad's devoured most of it. ;)
I love using the slow cooker in the summer, too. It's just too hot to turn on the stove.
