Easy Summer Recipe
I had to be at a meeting last night and I wanted to leave something for Bob for supper. I had some chicken drumsticks on hand and perused my Company's Coming "Slow Cooker Recipes" book to find this.
Lemonade Chicken
Frozen concentrate lemonade, thawed 1/2 of 12.5 oz.
Brown sugar packed 3 tbsp.
Ketchup 3 tbsp.
White vinegar 1 tbsp.
Liquid gravy browner 1 tsp.
Chicken breasts 6
Stir first 5 ingredients in bowl.
Arrange chicken pieces in bottom of 3.5 L slow cooker, overlapping if necessary. Pour lemonade mixture over all. Cover. Cook on Low for 8 to 10 hours or on High for 4 to 5 hours. Thicken gravy slightly.
Serves 6.
Notes:
I used pink lemonade - that's what I had. I didn't have liquid gravy browner so used powdered instead. I think chicken bouillion might give the flavour but not the extra color (not a big problem to me). I used 12 chicken drumsticks instead and the lemonade mixture was enough for that. I browned them under the broiler for a few minutes before putting them in the slow cooker. The slow cooker is so easy for summer meals and it doesn't heat up the whole house.

ReplyDeleteI love using the slow cooker in the summer, too. It's just too hot to turn on the stove.
